It’s the third day on our advent calendar already – time to bring out a twist on a classic Christmas recipe, the popular panettone!
Panettone is actually a type of sourdough recipe, as it’s a leavened sweet bread. The yeast used it traditional recipes comes from “lievito madre”, or the mother dough, which is passed along to each new batch. This process, compared to regular baking methods, makes it more fragrant and tasty, and actually easier to digest.
Traditional Milanese panettone recipes also call for the cake to be hung upside down after baking, which is to prevent the cake falling in on itself it and to retain its fluffy texture. Some traditional recipes take as long as three days to make – definitely worth an extra slice after all that hard work!
